At Beleza by the Beach, food reflects the coastal soul of Goa—bold, comforting, and rooted in tradition. This signature seafood dish brings together a perfectly grilled seabass coated in a house-made peri peri marinade, paired with a robust prawn balchao that delivers depth, heat, and tang in every bite.

Served at Tentação, the all-day dining restaurant, and Nazare, the beachfront restaurant at Beleza, this dish is best enjoyed with the sound of the waves, warm sea breeze, and freshly baked Goan bread on the side.

Ingredients: Peri Peri Masala

  1. Dry red chilli – 1 kg
  2. Toddy vinegar – 2 litres
  3. Onion – 500 g
  4. Garlic – 100 g
  5. Cinnamon stick – 30 g
  6. Clove – 40 g
  7. Peppercorn – 40 g
  8. Sugar – 50 g

Method
Soak all the ingredients together overnight. Grind into a smooth, vibrant paste. This peri peri masala forms the base of both the fish marinade and the prawn balchao, giving the dish its signature Goan character.

Ingredients: Prawn Balchao

  1. Prawns – 110 g (7 pieces)
  2. Oil – 2 tbsp
  3. Garlic – 15 g, chopped
  4. Ginger – 15 g, chopped
  5. Onion – 40 g, chopped
  6. Peri peri masala – 60 g
  7. Dry shrimp, crushed – 25 g

Method
Heat oil in a pan and sauté the chopped garlic, ginger, and onions until golden brown. Add the peri peri masala and allow it to cook gently. Stir in the crushed dry shrimp, followed by the prawns. Cook for a few minutes until the masala thickens and the oil begins to separate, indicating a well-cooked balchao.

Grilled Seabass

Method
Marinate the seabass with ginger-garlic paste, salt, and peri peri masala. Heat a pan with oil and place the fish skin-side down, pressing gently for a minute to achieve a crisp, even skin. Once cooked to about 70 percent, turn the fish over and finish cooking until golden brown and tender.

To Serve
Plate the grilled seabass on a wide platter, accompanied by prawn balchao and traditional Goan bread. This dish is served at Tentação, ideal for relaxed, all-day dining, and at Nazare, where beachfront views elevate the flavours and complete the coastal dining experience at Beleza by the Beach.
